The winds of taste that sweep over Sweden and the world have combined and tested most of the variations one can imagine. However, cheese and champagne turned out to be an unknown and unexpected combination for many. It was an experienced group who tasted 11 champagnes and 30 selected cheeses from Androuet, and we found out that 30 cheeses and 11 champagnes are 330 small bites each, but together very a lot of cheese.
We certainly had expected us to work champagne would work very well for many of the cheeses. It is known that white wine is often preferable to red wine for cheese. Champagne is the perfect white wine with its very high acidity and minerality. But we could never have dreamt that it would work so amazingly well.
